Warning: Plot Spoilers Ahead
The Fast and the Furious
Replace the cars with bikes, and the rest of the movie story line is almost same. In TFATF there is a gang of thieves that use high speed cars for performing highway truck robbery. And speed driver undercover cop is used to track down the thieves who joins the gang. There are many car races (illegal) in the movie.
In Dhoom there is a gang of robbers that use high speed bikes to rob banks and get away. A speed biker is infiltrated in the gang by the police for catching them. And yes, there are illegal bike racing in the movie.
Ocean's Eleven is a movie about the robbery of a casino in Las Vegas during the festival season when there is a record amount of money in its vault. This movie is about the high tech robbery of that high security vault by a group of highly specialized robbers.
In Dhoom the same group of robbers do the robbery of a casino in Goa on new year festive time when there is a record amount of money in its vault. This high tech vault is to be robbed. Though they tried a lot to make it high tech, but nothing worked and the robbery turned out to be a low tech affair, utterly unconvincing.
Its sequel (Dhoom 2) is expected in 2006. Lets see if it is also a copy of some other movie!
Also note, the Dhoom's wiki link (see related links below) attributs the movie to be loosely based on French movie Taxi (1998). But the story line does not match the same.
In Mumbai there are robberies going on in which the gang uses high speed bikes to escape (that too on highly congested roads of Mumbai!!!). Police uses all kind of techniques to catch them but are unsuccessful. So they use another high speed biker and by hook-and-crook introduce it to the gang and gets in the gang. Now they move to Goa to rob a casino on new year eve. But the undercover biker give all the information to the police. After the robbery when they try to escape they are all chased and killed.
